| 175g Yaki soba noodles | 40g Sliced chicken breast | | 40g Prawns | 1pc Egg | | 20g Bean sprouts | 10g Chinese cabbage | | 10g White cabbage | 10g Garlic | | 30ml Cooking oil | 15g Sambal | | 10g Pakcoy leaf | 10ml Sweet soy sauce | | 2ml Oyster sauce | 2g Chicken powder | | 5ml Salt | 10ml Sesame oil | | 10g Carrot spiral | 5g Green pea sprouts | | 2g Spring onion | 15g Tomato wedges | | 2g Fried onion | |
Step 1: Separate Yaki soba noodles; keep for mis-en-place.
Step 2: Prepare sliced chicken breast, prawns, bean sprouts, white cabbage, Chinese cabbage, pak choy and Yaki soba noodles.
Step 3: Heat cooking oil in a wok over a medium-high heat; stir fry the crushed garlic, chili paste and egg; add the items from Step 2 and stir fry for 1 minute. Add sweet soy sauce, oyster sauce, chicken powder, salt, white pepper and sesame oil. Stir fry for 2 minutes till you get a smoky flavor. Add the noodles and stir it well, so that the ingredients will be evenly distributed.
Step 4: Transfer to deep plate and garnish with spiral carrots, green pea sprouts, tomato wedges and fried shallots.
Ready to serve
